Some examples that come to mind are Indian, Chinese, and (to an extent) Korean food.
As a Korean I don’t think I’ve ever heard anyone try to make K-BBQ or a meat dish like bulgogi out of tofu or other vegetables.
Where is this obsession coming from? It’s not like Westerners don’t have access to most of the ingredients used in these cuisines. The last time I was in the US you had an even wider variety of ingredients at supermarkets.
