I’d like to be able to speak into my phone and have it write down what I’m saying on some sort of note-taking app.

The Notes app that comes with iPhone has this but to use this feature you have to “enable diction” in settings, and when you do this it explicitly says that it sends anonymous transcripts to Apple. I don’t like this, because what if I mention names and personal information?

I tried a couple of other apps, but they all require you to turn on that diction thing in settings which sends transcripts to Apple.

Does anyone know a more privacy-focus app for this? Or other solutions?
