First time doing any home networking and im curious to learn how i could secure, manage and isolate multiple servers at home.

Im working on a design where ill have a media/plex server, storage server, backup server, security system server, steam link & bluestacks dedicated machine.

I would want to be able to access some of these securely on public networks like public wifi or cell networks via my phone. I would also want to manage which devices on my network have access to which server or which directories in a server. I have a primary pc i use that i want to have secure access to all servers but be able to isolate and protect each one if one of them were infected with malware. I also have work laptops that are on my network but i dont want those to have any access or visibility to other servers/devices on my network.
