A “Caja China” cooks a whole pig in just a few hours. The coal goes on a tray on top of the pig, releasing heat up into the air. I understand that heat conducts down into the metal framed box below the coal but what is the logic of having the coal on top? - seems like a lot of heat goes to waste.
